I´m a vegetarian and sometimes Mexico can be a challenging place for me. But the times are a-changing here in Mexico with regard to vegetarian food lately, I am happy to report!

Tofu is becoming more and more available. Several of the larger supermarkets carry it. I still can´t seem to master having it come out crispy and flavorful but I keep trying. Stir fry, yum.

Broccoli and cheese ravioli were a recent find in a double size at Sam´s. They freeze well so I package them up for quick meals for me when Paul is having meat for dinner. I have been
tossing them lately with fresh tomatoes, onion, and garlic cooked quickly so it still tastes
fresh. I need to plant more basil, mine went to seed, so I have been using parsley on
everything and it is almost as good.

Chata soy chorizo is a favorite for both Paul and me. Usually I cook onions, red pepper, garlic, and spinach along with the chorizo in kind of a scramble and then garnish with parsley or cilantro and sour cream. Oh, in a corn tortilla. Today we made this for lunch and added a cut up potato. Excellent! (I have tried other brands, and this is my favorite. Look for the package that says 100% vegetal)

Croquettes? Potato-broccoli-corn or Potato-cheese are the types I´ve tried. I like to keep these in the freezer for those days when you want something hearty. They´re good but the calorie count is a bit high.

Mr. Falafal and Pita Bread – can you believe it? I can make all kinds of good things out of
these. Lately I have made a quick lunch of two pieces of falafal cooked on the comal with
some onion…stuffed in a pita bread with a whole bunch of parsley and a drizzle of dressing.
